Berry Crumble

Ingredients
For the filling:
- 4 cups mixed berries (such as blueberries, raspberries, blackberries, and strawberries), fresh or frozen
- 2 tablespoons honey or maple syrup
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- Zest of 1 lemon
For the crumble topping:
- 1 cup rolled oats
- 1/2 cup almond flour or whole wheat flour
- 1/4 cup chopped nuts (such as almonds, walnuts, or pecans)
- 2 tablespoons coconut oil or unsalted butter, melted
- 1 tablespoon honey or maple syrup
- 1/2 teaspoon ground cinnamon
- A pinch of salt
Directions
- Preheat your oven to 350°F (175°C). Grease a medium-sized baking dish (around 8×8 inches) or line it with parchment paper.
- In a large bowl, combine the mixed berries, honey or maple syrup, cornstarch, vanilla extract, and lemon zest. Toss well to combine, ensuring that the berries are coated evenly. Transfer the berry mixture to the prepared baking dish.
- In another bowl, make the crumble topping by combining the rolled oats, almond flour or whole wheat flour, chopped nuts, melted coconut oil or butter, honey or maple syrup, cinnamon, and a pinch of salt. Mix until the ingredients are well combined and crumbly.
- Sprinkle the crumble topping evenly over the berry mixture in the baking dish.
- Bake in the preheated oven for 30-35 minutes, or until the crumble topping is golden brown and the berry filling is bubbly.
- Remove the berry crumble from the oven and allow it to cool for at least 10 minutes before serving. This allows the filling to set a little.
