Ingredients
- 1 cup of uncooked white rice
- 2 cups of water
- 2 cups of milk
- 1/2 cup of granulated sugar
- 1 cinnamon stick
- 1/4 teaspoon of salt
- 1 teaspoon of vanilla extract
- Ground cinnamon, for garnish
Directions
- In a medium-sized saucepan, combine the rice, water, and cinnamon stick. Bring the mixture to a boil over high heat.
- Reduce the heat to low and cover the saucepan with a lid. Simmer the rice for 18-20 minutes, or until the water has been absorbed and the rice is tender.
- Add the milk, sugar, and salt to the saucepan, and stir well to combine.
- Bring the mixture to a boil over medium-high heat, then reduce the heat to low and let it simmer for 20-25 minutes, or until the pudding has thickened and the rice is fully cooked.
- Stir in the vanilla extract, and remove the cinnamon stick.
- Pour the rice pudding into serving bowls, and sprinkle ground cinnamon on top as a garnish.
- Let the cinnamon rice pudding cool to room temperature, or chill it in the refrigerator before serving.
