Peach Cobbler

Ingredients
- 6 cups of peeled and sliced fresh peaches (about 6-8 medium-sized peaches)
- 1 cup of all-purpose flour
- 1 cup of granulated sugar
- 1 teaspoon of baking powder
- 1/2 teaspoon of salt
- 1 cup of milk
- 1/2 cup of unsalted butter, melted
- 1 tablespoon of cornstarch
- 1/4 cup of boiling water
Directions
- Preheat your oven to 375°F (190°C) and butter a 9-inch square baking dish.
- Arrange the sliced peaches in the prepared baking dish.
- In a mixing bowl, combine the flour, 3/4 cup of sugar, baking powder, and salt. Mix until well combined.
- Add the milk and melted butter to the dry ingredients, and stir until a smooth batter forms.
- Pour the batter over the peaches, and use a spatula to spread it evenly.
- In a separate bowl, mix together the remaining 1/4 cup of sugar and cornstarch.
- Sprinkle the sugar and cornstarch mixture over the batter.
- Pour the boiling water over the top of the cobbler. This will help create a syrupy layer at the bottom of the cobbler.
- Bake the peach cobbler in the preheated oven for 45-50 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Remove the peach cobbler from the oven and let it cool for a few minutes before serving.
- Serve the peach cobbler warm, with a scoop of vanilla ice cream or a dollop of whipped cream on top, if desired.
