Ingredients

  • 6 cups of peeled and sliced fresh peaches (about 6-8 medium-sized peaches)
  • 1 cup of all-purpose flour
  • 1 cup of granulated sugar
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 1 cup of milk
  • 1/2 cup of unsalted butter, melted
  • 1 tablespoon of cornstarch
  • 1/4 cup of boiling water

Directions

  1. Preheat your oven to 375°F (190°C) and butter a 9-inch square baking dish.
  2. Arrange the sliced peaches in the prepared baking dish.
  3. In a mixing bowl, combine the flour, 3/4 cup of sugar, baking powder, and salt. Mix until well combined.
  4. Add the milk and melted butter to the dry ingredients, and stir until a smooth batter forms.
  5. Pour the batter over the peaches, and use a spatula to spread it evenly.
  6. In a separate bowl, mix together the remaining 1/4 cup of sugar and cornstarch.
  7. Sprinkle the sugar and cornstarch mixture over the batter.
  8. Pour the boiling water over the top of the cobbler. This will help create a syrupy layer at the bottom of the cobbler.
  9. Bake the peach cobbler in the preheated oven for 45-50 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  10. Remove the peach cobbler from the oven and let it cool for a few minutes before serving.
  11. Serve the peach cobbler warm, with a scoop of vanilla ice cream or a dollop of whipped cream on top, if desired.
